Instructions
1
Prep
Slice the beef sirloin thinly against the grain and set aside. Mince the garlic. Slice the Chinese broccoli stems and separate the leaves.
2
Marinate
Toss the sliced beef with 1/2 tablespoon of the gluten-free tamari in a small bowl; leave to sit for 10 minutes at room temperature.
3
Mix
Whisk together the remaining tamari, fish sauce, brown sugar, and rice vinegar in a small bowl until the sugar dissolves.
4
Sear
Heat 1/2 tablespoon vegetable oil in a wok over high heat until shimmering. Sear the beef for 90 seconds per side until browned at the edges but still pink inside. Transfer to a plate.
5
Saute
Add the remaining oil to the wok over high heat. Saute the garlic for 20 seconds until fragrant and just golden at the edges.
6
Fry
Add the noodles and broccoli stems to the wok. Fry over high heat for 2 minutes, tossing constantly, until the noodles pick up light char spots.
7
Build
Push the noodles to one side of the wok, crack the egg into the cleared space, and scramble for 30 seconds over high heat until just set, then fold through.
8
Finish
Pour the sauce over the noodles, return the beef and broccoli leaves to the wok, and toss over high heat for 1 minute until the sauce clings glossy and leaves wilt.
9
Plate
Tip the noodles onto a plate, dust with ground white pepper, and serve immediately while hot.
