Watermelon with Whipped Honey-Yogurt Cheese

A Greek-leaning take on watermelon and soft cheese, built light by whipping low-fat cottage cheese with Greek yogurt instead of feta or cream, sweetened only with a touch of honey and finished with mint and pistachio.

Instructions

1
Cut the watermelon flesh into 2cm cubes, discarding seeds, and chill in the fridge while you prepare the cheese.
2
Blend the drained low-fat cottage cheese with the Greek yogurt until completely smooth and airy, about 1 minute.
3
Stir the honey and lemon juice into the whipped cheese until just combined, keeping it loose rather than stiff.
4
Divide the chilled watermelon cubes between two bowls.
5
Spoon the whipped honey-yogurt cheese over the watermelon in each bowl.
6
Scatter the crushed pistachios and shredded mint over the top just before serving.
