Vasilopita (Low-Calorie New Year Cake)
A scaled-down, lightened take on Greece's traditional New Year Vasilopita, swapping butter for a splash of oil and leaning on Greek yogurt for moisture and a protein lift, while keeping the classic orange-cinnamon crumb and lucky-coin tradition intact.

Instructions
1
Preheat the oven to 175°C and lightly grease a 10cm / 4 inch round cake tin, lining the base with a small circle of parchment.
2
In a bowl, whisk the egg with the sugar-white until pale and slightly thickened, about 1 minute.
3
Stir in the greek yogurt, vegetable oil, orange juice, orange zest and vanilla extract until smooth.
4
Sift the all-purpose flour, baking powder and cinnamon-ground over the wet mixture and fold gently just until no dry streaks remain.
5
Pour the batter into the prepared tin, smooth the top, and scatter the sliced almonds evenly over the surface (a coin wrapped in foil can be tucked in now per tradition).
6
Bake for 28-32 minutes until a skewer inserted in the centre comes out clean and the top springs back lightly.
7
Cool in the tin for 10 minutes, then turn out onto a wire rack and cool completely before slicing into 2 pieces.
