Twisted Sugar Donuts
A Korean-style twisted sugar donut (kkwabaegi) rebuilt to hit a strict GLP-1 macro target: whey protein and oat flour bulk out a lightened dough, cocoa powder quietly supplies the fibre floor, and the dough is fried briefly so very little oil is actually absorbed.

Instructions
1
Whisk the all-purpose flour, oat flour, whey protein isolate, cocoa powder, yeast and salt together in a bowl.
2
Warm the skim milk until just tepid, then stir in the sugar and yeast mixture; let it stand for 5 minutes until foamy.
3
Add the beaten egg and greek yogurt to the wet mixture, then fold into the dry ingredients to form a soft, slightly sticky dough.
4
Knead briefly on a lightly floured surface for 3-4 minutes until smooth, then cover and let rise in a warm spot for 45 minutes until doubled.
5
Turn the dough out, divide into two pieces, and roll each into a rope about 20cm long; twist each rope and pinch the ends to seal into a twisted ring.
6
Cover the twists loosely and let prove for a further 20 minutes.
7
Heat the vegetable oil in a pan to 175°C using a thermometer.
8
Fry each twist for 60-90 seconds per side until deep golden brown, then lift onto a wire rack to drain.
9
While still warm, dust each donut with the reserved sugar for coating.
10
Serve immediately while warm and fresh.
