Turnip Cake

A lightened take on the Cantonese dim sum classic, this steamed savory-sweet root cake swaps in extra grated carrot and a thinner rice-flour batter to keep the slices tender without the usual cured pork fat and heavy oil searing, finishing with a quick pan-sear and a scatter of toasted sesame.

Instructions

1
Peel and coarsely grate the carrot (standing in for the traditional daikon turnip) to give about 170g of shreds.
2
Place the grated root in a pan with the water and simmer gently for 4-5 minutes until softened and slightly translucent; do not drain.
3
Whisk the rice flour and tapioca starch into the warm vegetable-water mixture off the heat, stirring quickly to avoid lumps, until a thick slurry forms.
4
Stir in the minced ginger, salt and beaten egg white until fully combined into a smooth, thick batter.
5
Pour the batter into a lightly oiled small cake tin (about 10cm), smoothing the top with a spatula.
6
Set the tin into a steamer over simmering water and steam covered for 25 minutes, until a skewer comes out clean and the top is set and glossy.
7
Lift out and cool for at least 15 minutes so the cake firms up enough to slice cleanly.
8
Turn out, cut into slices, and pan-sear each slice in the vegetable oil in a hot wok for 1-2 minutes per side until lightly golden.
9
Scatter the toasted sesame seeds over the top and serve warm.
