Three Milk Custard

A protein-boosted take on Mexican flan de tres leches, built on egg, egg white and a trio of milks with unflavoured whey isolate whisked into the custard base so each silky, caramel-draped ramekin clears 20g of protein without losing the classic wobble.

Instructions

1
Heat the oven to 160°C (325°F) and set a kettle of water to boil for the bain-marie.
2
Scatter the sugar and water in a small pan over medium heat; swirl (don't stir) until it turns deep amber, then immediately divide between the 2 ramekins, tilting to coat the base.
3
Whisk the egg and egg white together in a bowl until just combined, no foam.
4
In a separate jug, whisk the evaporated milk, condensed milk and skim milk together, then whisk in the whey protein isolate until fully dissolved with no lumps.
5
Combine the milk mixture with the eggs, add the vanilla extract and salt, and whisk gently to avoid incorporating air.
6
Strain the custard through a sieve into the caramel-lined ramekins to remove any chalazae or undissolved protein specks.
7
Place the ramekins in a deep baking dish, pour boiling water around them to reach halfway up the sides, and bake for 30-35 minutes until the custards are just set with a slight wobble in the centre.
8
Lift the ramekins from the water bath and cool to room temperature, then cover and chill for at least 4 hours.
9
Run a thin knife around the edge of each ramekin and invert onto a small plate, letting the caramel sauce pour over the custard before serving.
