Fried Fresh Anchovies
Whole fresh anchovies are butterflied, dusted in seasoned flour and fried until the skin turns golden and shattering-crisp while the flesh stays soft and briny. Served hot with lemon wedges and parsley, this is a classic Greek taverna starter.

Instructions
1
Prep
Butterfly the anchovies by pressing each one open along the belly, removing the spine with your fingers, and patting dry with paper towels.
2
Dredge
Season the flour with salt and pepper on a plate, then press each anchovy into the flour on both sides, shaking off excess.
3
Fry
Heat the olive oil in a heavy skillet over medium-high heat until shimmering, then lay anchovies in a single layer and fry 1 to 2 minutes per side until golden and crisp.
4
Plate
Arrange anchovies on a plate, scatter grated garlic and chopped parsley over the top, and serve immediately with lemon wedges alongside.
