Thin Pastry Nut Roll Tart
A Turkish-inspired riff on baklava-style nut pastry, reworked into individual thin-crust tartlets with a protein-boosted nut filling instead of the usual syrup-soaked layers. The honey-walnut top keeps the classic flavour while the cottage cheese and whey base quietly carries the protein.

Instructions
1
Rub cold butter into the flour until it resembles coarse crumbs, then bind with iced water into a firm dough; wrap and rest in the fridge for 20 minutes.
2
Roll the dough out very thin and line two 8cm tart tins, trimming the edges; prick the bases with a fork.
3
Blind-bake the tart shells at 190C/375F for 8 minutes until pale gold, then set aside to cool slightly.
4
Blend the cottage cheese until completely smooth, then whisk in the whey protein isolate, egg white, 14g honey, cinnamon and vanilla extract until a thick, pourable filling forms.
5
Fold the chopped walnuts through the filling and divide evenly between the two tart shells.
6
Bake at 170C/340F for 14-16 minutes until the filling is just set with a slight wobble in the centre.
7
Cool the tarts fully on a wire rack, then brush the tops with warmed honey and scatter over the crushed walnuts just before serving.
