Tamarind Ice

A tangy-sweet Mexican-style ice built from tamarind pulp steeped with dates for natural body, cut with lime and a whisper of warm spice, then hand-scraped into loose granita-style crystals instead of churned.

Instructions

1
Soak a block of dried tamarind pulp (about 60g, not separately listed as it falls outside the fixed ingredient palette) in the 220g boiling water for 20 minutes, mashing occasionally to loosen the fruit from the fibres and seeds.
2
Strain the tamarind liquid through a fine sieve into a bowl, pressing hard with the back of a spoon to extract all the thick pulp; discard the fibrous solids.
3
Add the chopped dates to the warm tamarind liquid and stir until they soften slightly, then whisk in the sugar, lime juice, salt and five-spice until the sugar fully dissolves.
4
Blend the mixture briefly with a stick blender or in a blender jug until completely smooth with no date fragments remaining.
5
Taste and adjust with a touch more lime juice if the mix tastes flat once cold, since freezing mutes sweetness and sourness.
6
Pour the mixture into a shallow tray or tub (about 350ml capacity) and freeze for 1 hour.
7
Scrape the half-frozen mixture with a fork every 30 minutes for the next 2-3 hours, breaking up ice crystals each time, until the whole mixture is light, fluffy and granular.
8
Spoon into chilled glasses in scoops and serve immediately.
