Strawberry Ice
A classic American strawberry water ice, built from pureed fresh strawberries, sugar, water and a touch of lemon juice, worked by hand into a bright, fluffy, crystalline ice rather than churned into a smooth sorbet.

Instructions
1
Hull the strawberries and puree with the water in a blender until completely smooth.
2
Pour the puree into a saucepan with the sugar and warm gently over low heat, stirring until the sugar fully dissolves, about 2 minutes; do not let it boil.
3
Stir in the lemon juice, then pour the mixture into a shallow freezer-safe tray (about 350ml) so it sits no more than 2cm deep.
4
Freeze for 45 minutes, then scrape the half-set edges into the centre with a fork.
5
Return to the freezer and repeat the forking every 30-40 minutes for the next 2-3 hours, breaking up ice crystals each time until the whole tray is a mass of light, fluffy ice shards.
6
Scrape into chilled bowls or glasses and serve in 2 scoops per portion.
