Steamed Rice Flour Pudding

A traditional Indian steamed rice flour pudding, set in individual ramekins with coconut milk, cardamom and saffron, and finished with slivered pistachios and almonds. Dense, fragrant and gently sweet, it belongs to the same family as puttu and modak-style steamed rice sweets served at festive gatherings.

Instructions

1
Lightly grease two 180ml ramekins with melted ghee.
2
In a saucepan, warm the whole milk and coconut milk together over low heat without boiling.
3
Whisk the glutinous rice flour into the warm milk gradually, breaking up any lumps, until you have a smooth, thick batter.
4
Stir in the brown sugar, ground cardamom, saffron with its soaking milk, and salt, and cook gently for 2 minutes until the sugar dissolves and the batter thickens slightly.
5
Divide the batter evenly between the two greased ramekins, smoothing the tops with the back of a spoon.
6
Cover each ramekin tightly with foil and place in a steamer basket or on a trivet in a large pot with simmering water reaching halfway up the ramekins.
7
Steam covered for 25 minutes, checking the water level once, until the puddings are set firm but still tender to the touch.
8
Remove the ramekins carefully and let them cool for 10 minutes, then run a knife around the edges and invert onto small plates, or serve directly in the ramekins.
9
Scatter the slivered pistachios and almonds over the top just before serving.
