Sikhye with Pomegranate and Pear

Sikhye with Pomegranate and Pear

A traditional Korean sweet rice punch, sikhye is made by steeping malted barley water with cooked rice until the grains rise and float, then sweetening gently with brown sugar and ginger before a long chill. This version is finished with fresh pear, ruby pomegranate arils and a scatter of pine nuts for a bright, fruit-flecked take on the classic palate-cleansing dessert drink.

Instructions

1
Strain the pre-made malt (barley) water through a fine sieve to separate the clear liquid from the grain sediment, reserving the clear amber liquid.
2
Combine the malt liquid with the sliced ginger in a pot and bring to a gentle simmer for 5 minutes to infuse, then remove the ginger slices.
3
Stir the brown sugar into the warm liquid until fully dissolved, then add the cooked rice grains and continue simmering gently for 8-10 minutes until the rice grains rise and float to the surface.
4
Remove from heat and let the sikhye cool to room temperature, then transfer to the fridge and chill thoroughly for at least 3 hours, ideally overnight.
5
Ladle the chilled sikhye with its floating rice grains into two small bowls.
6
Scatter the diced pear and pomegranate arils over the top of each bowl just before serving.
7
Float a few whole pine nuts on the surface of each bowl as a traditional garnish and serve ice cold.
