Semolina Syrup Cake Bars
A protein-boosted riff on Greek syrup-soaked semolina cake, baked as a single dense bar and finished with a light honey-orange syrup rather than the classic sugar-heavy soak.

Instructions
1
Preheat the oven to 175°C (350°F) and line a 10x10cm (4x4 inch) tin with parchment.
2
Whisk the egg and egg white together in a bowl until frothy, then whisk in the greek yogurt and honey until smooth.
3
Sift in the semolina, whey protein isolate, baking powder and cinnamon, folding gently until just combined and no dry pockets remain.
4
Fold in the orange zest, then pour the batter into the prepared tin and smooth the top with a spatula.
5
Bake for 18-20 minutes until golden and a skewer inserted in the centre comes out clean.
6
While the bar cools for 5 minutes, warm the water and remaining honey in a small pan until just syrupy, about 2 minutes.
7
Spoon the warm syrup evenly over the warm cake, letting it soak in fully before cutting into a single square to serve.
