Peach Water Ice

A Greek-style granita made from ripe pureed peaches, sharpened with lemon juice and lightly sweetened, then hand-scraped into loose, snow-like crystals rather than churned smooth. Served icy and refreshing, it is a simple sun-drenched finish to a summer meal, needing nothing more than a freezer and a fork.

Instructions

1
Peel and roughly chop the peaches, then blend with the water, sugar and lemon juice until completely smooth.
2
Taste the puree and add a touch more sugar if the peaches are under-ripe, blending briefly to dissolve.
3
Pour the mixture into a shallow freezer-safe tray, spreading it to an even layer about 1.5cm deep.
4
Freeze uncovered for 45 minutes, then scrape the surface with a fork to break up the forming ice crystals.
5
Return to the freezer and repeat the forking every 30-40 minutes for the next 2-3 hours, until the whole tray is a mass of light, separate ice flakes.
6
Scoop into chilled glasses or bowls and serve immediately while still granular and cold.
