Instructions

1
Soak split moong dal (used here as a stand-in via its ground flour form) is skipped since pre-ground flour is used directly; measure out the moong dal flour and gram flour into a bowl.
2
Heat the ghee in a heavy-bottomed pan over low-medium heat, then tip in the two flours and roast, stirring constantly, for 8-10 minutes until the mixture turns a deep golden colour and smells nutty.
3
Lower the heat and stir in the condensed milk and sugar, mixing briskly to avoid lumps, then cook for another 4-5 minutes until the mass thickens and starts pulling away from the sides of the pan.
4
Stir in the ground cardamom, then immediately tip the mixture into a lightly greased 10x10cm tin and press down firmly and evenly with the back of a greased spoon or spatula.
5
Scatter the slivered almonds and pistachios over the top, pressing them gently into the surface so they adhere.
6
Let the burfi rest at room temperature for 30 minutes until fully set and firm to touch.
7
Cut into 4 even pieces with a sharp knife and lift out of the tin.
