Luqaimat with Rose Syrup
Luqaimat are the small, golden, deep-fried dough balls eaten across the Gulf during Ramadan and at celebrations, made from a loose yeasted batter rather than a kneaded dough so the inside stays airy and custardy against a crisp shell. As soon as they come out of the oil they're dunked warm into a lemon-sharpened sugar syrup perfumed with rose water, then finished with a scatter of toasted sesame seeds for crunch and nuttiness against the floral sweetness.
