Light Apple Clafoutis-Tart
A lightened reimagining of French apple tart that swaps pastry and cream for a thin yogurt-enriched custard baked directly over fanned apple slices in individual dishes, keeping the fruit-forward, custardy soul of the original while cutting the calorie load dramatically.

Instructions
1
Preheat the oven to 190°C (375°F) and lightly butter-spray or line 2 individual baking dishes (180ml each).
2
Toss the thinly sliced apple with the lemon juice and half the cinnamon, then divide evenly between the two dishes in an overlapping fan.
3
Whisk the egg, skim milk, Greek yogurt, sugar and vanilla extract together until smooth.
4
Sift the flour and remaining cinnamon into the egg mixture and whisk until just combined with no lumps.
5
Pour the batter evenly over the apples in both dishes, filling to just below the rim.
6
Bake for 28-32 minutes until puffed, golden on top, and a skewer inserted into the custard comes out clean.
7
Cool for 10 minutes on a wire rack before serving warm, as the custard continues to set as it cools.
