Hong Kong Egg Custard Pie (Lightened)

A lightened take on the Hong Kong bakery classic, this egg custard pie pairs a thin, buttery shortcrust shell with a silky, barely-sweet custard built on skim milk and evaporated milk instead of cream. Baked in individual tart tins, each pie delivers the same glossy, wobbly custard and crisp base in a fraction of the usual calories.

Instructions

1
Make the pastry rub cold cubed butter into sifted flour with the sugar and salt until the mix resembles coarse crumbs.
2
Add iced water a little at a time and bring together into a smooth dough; do not overwork. Wrap and rest in the fridge for 20 minutes.
3
Divide the dough in two and roll each piece thinly to line two 8cm individual tart tins; trim edges and chill the lined shells for 10 minutes.
4
Blind-line each shell with a small piece of parchment, prick the base, and bake at 200C for 8 minutes until just set but pale; remove parchment.
5
Meanwhile whisk the egg with the warmed skim milk, evaporated milk, sugar and vanilla until the sugar fully dissolves; strain through a sieve for a silky custard.
6
Pour the strained custard into the warm part-baked shells, filling almost to the rim.
7
Lower the oven to 160C and bake for 16-18 minutes until the custard has a gentle wobble in the centre but is no longer liquid.
8
Cool on a wire rack to room temperature before easing out of the tins; the custard will continue to set as it cools.
