High-Protein Italian Sponge Cake
A classic Italian sponge, or pan di Spagna, rebuilt around whisked whole eggs and a scoop of whey isolate so each airy, lemon-scented slice carries a genuine protein hit without turning dense or eggy.

Instructions
1
Heat the oven to 170C and butter-line a 10cm/4 inch round cake tin, dusting lightly with a little cake flour.
2
Whisk the whole egg, egg yolks (from the separated egg) and half the sugar in a stand mixer on high for 5-6 minutes until pale, tripled in volume and thick enough to leave a ribbon trail.
3
In a clean bowl, whisk the egg whites to soft peaks, then add the remaining sugar and whisk to stiff glossy peaks.
4
Sift the cake flour and whey protein isolate together twice to remove lumps, then fold gently into the whisked egg-yolk mixture in two additions along with the lemon zest and vanilla extract.
5
Fold in the whipped egg whites in three additions, cutting and turning gently to keep as much air in the batter as possible.
6
Pour into the prepared tin and bake for 20-22 minutes until well risen, golden and springy to the touch.
7
Cool in the tin for 5 minutes, then turn out onto a wire rack and cool completely before topping.
8
Once fully cool, swirl the whipped Greek yogurt over the top of the sponge and scatter over the halved raspberries just before serving.
