Grandmother's Custard Pie

A protein-boosted reworking of the Italian nonna's egg custard pie, built on a thin butter shortcrust shell and a silky cottage-cheese-and-whey custard that trades richness for a genuinely high-protein filling without losing the nutmeg-scented, slow-baked character of the original.

Instructions

1
Pulse the flour and cold cubed butter in short bursts until the mixture looks like coarse breadcrumbs, then bind with a teaspoon of ice water and press into two 8cm individual tart tins; chill 20 minutes.
2
Blind bake the shells at 190°C for 10 minutes, then set aside to cool slightly.
3
Blend the lowfat cottage cheese until completely smooth and lump-free, scraping down the sides twice.
4
Whisk the egg and egg white into the blended cottage cheese, then sift in the whey protein isolate and whisk again until no clumps remain.
5
Warm the skim milk gently (do not boil) and stream it into the egg mixture while whisking constantly.
6
Stir in the sugar, vanilla extract, lemon zest, grated nutmeg and salt until fully combined.
7
Pour the custard into the par-baked shells, filling almost to the rim.
8
Bake at 160°C for 22-25 minutes until the custard is just set with a slight wobble in the centre.
9
Cool to room temperature on a wire rack, then chill for at least 1 hour before slicing to serve.
