Fried Lentil Ball Sweets in Light Saffron Syrup
Indian · Dessert

Fried Lentil Ball Sweets in Light Saffron Syrup

A lightened take on a classic fried lentil-style sweet: a gram flour and strained yogurt batter is fried into small golden balls, then soaked briefly in a thin saffron-cardamom syrup instead of a heavy sugar-dense one. The yogurt adds tang and protein while keeping the batter light, and a short soak keeps the syrup uptake modest so each piece stays well under the usual calorie load of this family of sweets.

Instructions

1
Whisk the chickpea flour, strained thick Greek yogurt and baking powder together into a smooth, thick batter; rest it for 10 minutes so the flour hydrates.
2
Meanwhile make the syrup dissolve the sugar in the water over low heat, add crushed cardamom and the saffron with its soaking water, and simmer gently for 4-5 minutes until lightly syrupy, then take off the heat.
3
Heat the sunflower oil in a small, deep pan to 160-165°C.
4
Drop small teaspoon-sized portions of the batter into the hot oil, frying in batches and turning gently, until the balls are deep golden and cooked through, about 3-4 minutes per batch.
5
Lift the fried balls out with a slotted spoon, drain briefly, then slide them straight into the warm syrup while both are still warm.
6
Let the balls soak in the syrup for at least 20 minutes so they absorb it and plump slightly.
7
Lift out, scatter with chopped pistachio, and serve two balls per portion.
