Instructions
1
Grease a small 10x10cm tin or heatproof dish generously with melted lard, then arrange the halved glacé cherries, chopped dates, raisins, walnuts and pumpkin seeds in a decorative pattern across the base.
2
In a bowl, combine the warm mashed rice with coconut milk, sugar and the remaining melted lard, stirring until the rice is glossy and evenly coated.
3
Spoon the rice mixture carefully over the fruit and nut layer in the tin, pressing down gently and evenly so the pattern holds, then smooth the top flat.
4
Cover the tin tightly with foil and steam over simmering water for 35-40 minutes, until the rice is tender and fully set.
5
Remove from the steamer and let rest in the tin for 10 minutes to firm up before carefully inverting onto a plate so the fruit pattern faces up.
6
Whisk the cornstarch slurry into a small pan, warm gently with a splash of water until glossy and thickened, then brush this light glaze over the top.
7
Cool for a few more minutes, then cut into two squares to serve.
