Egg Custard Cake

A Chinese bakery-style egg custard cake reworked into a high-protein build: whole egg, egg white and whey protein isolate replace much of the usual sugar and fat, baked into a light, eggy, custard-soft crumb inside a thin golden sponge shell.

Instructions

1
Preheat the oven to 160°C and grease a 10cm round cake tin, lining the base with a disc of parchment.
2
Sift the flour, cornstarch and baking powder together into a bowl and set aside.
3
In a separate bowl, warm the skim milk gently (do not boil) and stir in the sugar until fully dissolved, then whisk in the evaporated milk and vanilla extract.
4
Whisk the whole egg and egg white together until pale and slightly foamy, about 1 minute, then whisk in the whey protein isolate until no lumps remain.
5
Pour the milk mixture into the egg mixture, whisking continuously to keep the custard smooth.
6
Fold the sifted dry ingredients into the wet mixture in two additions, mixing just until no streaks of flour remain.
7
Pour the batter into the prepared tin and tap gently on the counter to release large air bubbles.
8
Bake for 24-27 minutes until the top is golden and a skewer inserted in the centre comes out clean with a faint custardy wobble beneath the crust.
9
Cool in the tin for 10 minutes, then turn out onto a wire rack and cool for a further 15 minutes before slicing into 2 pieces.
