Cream-Filled Bomboloni, Lightened

A lightened take on the Italian fried bombolone, built with a lean yeasted dough and filled not with pastry cream but with a strained greek yogurt and cocoa cream folded through with fresh raspberries. The frying stays authentic and brief, the filling is where the calories are won back, landing each donut well under the usual cream-filled weight in sugar and fat while keeping the crisp-shell, soft-crumb, molten-centre bite the dish is known for.

Instructions

1
Warm the skim milk to blood temperature and stir in the yeast; leave 5 minutes until foamy.
2
In a bowl combine flour, sugar and salt, then mix in the beaten egg and the yeasted milk to form a soft, slightly sticky dough; knead 6-8 minutes until smooth and elastic.
3
Cover and prove in a warm spot for about 60 minutes, until roughly doubled.
4
Knock back gently, divide into 2 equal pieces and shape into tight balls; rest covered for 20 minutes.
5
Heat the vegetable oil in a deep, heavy pan to 170C using the thermometer.
6
Fry the dough balls for about 90 seconds per side, turning once, until deep golden all over; lift onto a wire rack lined with paper to drain.
7
While the donuts cool, whisk the cocoa powder and cornstarch into the chilled strained greek yogurt with the monk fruit extract and vanilla extract until smooth and lump-free.
8
Fold half the halved raspberries through the chocolate yogurt cream, keeping the rest back for garnish.
9
Once the donuts are fully cool, use a skewer to open a cavity in the side of each and pipe in the cocoa-raspberry cream using the piping bag.
10
Press the reserved raspberry halves into the filled opening of each donut and serve immediately.
