Classic Apple Pie
A lightened individual apple pie built on a yogurt-enriched shortcrust that cuts the usual all-butter load, filled with cinnamon-spiced apples thickened naturally with cornstarch instead of extra sugar.

Instructions
1
Pulse flour and salt together, then cut in the cold cubed butter until the mixture looks like coarse breadcrumbs.
2
Stir the greek yogurt into the flour mixture, then add the ice water a little at a time until the dough just comes together.
3
Divide the dough in two, flatten into discs, wrap and chill for 30 minutes.
4
Toss the sliced apple with sugar, cinnamon, cornstarch and lemon juice in a bowl and leave to macerate for 10 minutes.
5
Roll each disc out thinly and line two 8cm individual tart tins, trimming the excess overhang.
6
Divide the apple filling between the two lined tins, mounding it slightly in the centre.
7
Gather the dough trimmings, roll out and cut into thin strips, then lattice them over the top of each pie, or lay a simple lid and crimp the edges to seal.
8
Bake at 200C for 30-35 minutes until the crust is golden and the filling is bubbling through the lattice.
9
Cool on a wire rack for at least 15 minutes before serving so the filling sets.
