Baked Vanilla Custard Pots

A silky, low-carb reworking of the classic French baked custard, built on egg yolks, whole egg and heavy cream for richness, sweetened entirely with allulose so it holds the same wobbly, spoon-coating set and gentle vanilla-nutmeg character without the sugar load.

Instructions

1
Preheat the oven to 150°C (300°F) and set a kettle of water to boil for the bain-marie.
2
In a saucepan, warm the heavy cream over low heat with the vanilla extract just until small bubbles form at the edge; do not let it boil. Remove from heat.
3
In a bowl, whisk the egg yolks, whole egg, allulose and salt together until just combined and no streaks of yolk remain.
4
Slowly pour the warm cream into the egg mixture in a thin stream, whisking constantly to temper the eggs without scrambling them.
5
Strain the custard through a fine sieve into a jug to remove any cooked egg bits and air bubbles.
6
Divide the custard evenly between 2 ramekins (180ml each).
7
Place the ramekins in a deep baking dish and pour boiling water into the dish until it reaches halfway up the sides of the ramekins.
8
Bake for 32-35 minutes, until the custards are set at the edges but still have a gentle wobble in the centre; a thermometer should read 82-85°C in the middle.
9
Remove the ramekins from the water bath carefully and let cool to room temperature on the counter.
10
Cover and chill in the fridge for at least 2 hours before serving. Grate fresh nutmeg over the top just before serving.
