Avocado Ice
A pale jade Mexican paleteria classic, this avocado ice blends ripe avocado with milk, condensed milk and lime into a dense, creamy-tasting water ice that is scraped by hand into a soft, snow-like texture rather than churned.

Instructions
1
Halve and pit the avocado, scoop 130g of flesh into a blender.
2
Add the whole milk, condensed milk, lime juice and sugar.
3
Blend on high for 1-2 minutes until completely smooth and pale green, scraping down the sides once.
4
Taste and add a touch more lime juice if the mixture tastes flat, as avocado dulls sweetness.
5
Pour the mixture into a shallow tray or tub (about 350ml / 12 fl oz) and spread level.
6
Freeze for at least 4 hours, scraping with a fork every 45-60 minutes for the first 2-3 hours to break up ice crystals into a light, fluffy texture.
7
Once fully frozen and scraped to a soft, granular consistency, scoop into chilled bowls to serve.
