Sweet Red Bean Shaved Ice with Fruit
A Japanese summer classic reimagined with a date paste standing in for sweetened red bean, piled over finely shaved ice and topped with condensed milk and bright fresh fruit. Light, cold, and barely sweet until the condensed milk hits it.

Instructions
1
Dissolve the sugar into the water, pour into a shallow freezer-safe container and freeze for at least 6 hours until solid.
2
Meanwhile, simmer the dates with a splash of water over low heat for 8-10 minutes, mashing until you have a thick, sweet paste resembling anko; cool completely.
3
Hull and slice the strawberries, and peel and dice the mango.
4
Once frozen solid, shave the ice block finely using a spoon or shaved-ice scraper directly into two chilled bowls, mounding it high.
5
Spoon the sweet date paste over each mound of shaved ice.
6
Scatter the strawberry and mango pieces over the top.
7
Drizzle the condensed milk generously over each bowl.
8
Finish with a few small mint leaves and serve immediately with spoons.
