Sweet Milk Cheesecake
A Mexican-style sweet milk cheesecake rebuilt around cottage cheese, Greek yogurt and whey protein isolate instead of cream cheese and sugar, keeping the cinnamon-flecked, dulce-de-leche-adjacent flavour of pastel de tres leches cheesecake while landing well over 20g of protein per slice.

Instructions
1
Preheat the oven to 160°C (320°F) and line the base of a 10cm/4 inch springform tin with parchment.
2
Blend the cottage cheese and greek yogurt in a blender until completely smooth with no curds visible, about 1-2 minutes.
3
Add the whey protein isolate, cornstarch, cinnamon, vanilla extract and lemon juice and blend again until fully incorporated.
4
Add the beaten egg and condensed milk and pulse briefly just until combined - do not overmix once the egg is in.
5
Pour the batter into the prepared tin and tap gently on the counter to release air bubbles.
6
Bake for 32-35 minutes until the edges are set and the centre still has a slight wobble.
7
Turn off the oven, crack the door open, and let the cheesecake cool inside for 10 minutes to prevent cracking.
8
Remove and cool to room temperature, then chill in the fridge for at least 4 hours or overnight until fully set.
9
Dust the top with the reserved cinnamon just before slicing and serving.
