Sugar Syrup Donut Bites
A Korean street-market classic reimagined as bite-sized yeasted rice-flour dough balls, stuffed with cinnamon walnuts, deep-fried until deeply golden, then drenched in a warm honey syrup so the glaze soaks right into the crust.

Instructions
1
Whisk glutinous rice flour, all-purpose flour, yeast, sugar and salt together in a bowl.
2
Add lukewarm milk and the 4g vegetable oil, mix to a soft, slightly sticky dough, then knead briefly on a floured surface until smooth.
3
Cover the bowl and let the dough rise somewhere warm for 45 minutes, until roughly doubled.
4
Knock the dough back, divide into small balls, flatten each slightly and press a pinch of chopped walnut and cinnamon into the centre, then pinch closed and roll smooth.
5
Rest the shaped bites for 15 minutes while the oil heats.
6
Heat the deep-frying oil to 170°C (338°F) in a small heavy pot, checking with a thermometer.
7
Fry the bites in two batches, turning often, for 3-4 minutes each until deep golden brown and cooked through.
8
Lift onto a wire rack to drain briefly while you make the syrup.
9
Warm the honey and water together in a small pan until syrupy, stir in the cinnamon, then remove from heat.
10
Dip or brush the warm fried bites generously in the honey syrup, coating them well, and serve immediately.
