Sugar Dusted Date Cookies
A Middle Eastern cookie built around chopped dates folded into a cardamom-scented butter dough, studded with walnut and finished with a generous dusting of sugar once baked. The dates soften and caramelise slightly in the oven, giving a sticky, fudgy centre against a tender, crumbly shell - a close cousin to the date-filled ma'amoul family but made free-form rather than moulded.
