Steamed Sweet Rice Cake (Nian Gao Style)

A glossy, chewy steamed cake made from glutinous rice flour sweetened with brown sugar and enriched with coconut milk, in the tradition of Chinese nian gao. Translucent, dense, and springy rather than airy, it is finished with a scatter of toasted sesame seeds.

Instructions

1
Grease a 10cm/4 inch round cake tin lightly with vegetable oil and set up a steamer with enough water to steam for 35 minutes without running dry.
2
Sift the 90g glutinous rice flour into a mixing bowl to remove lumps.
3
In a small saucepan, warm the 60g water with the 45g brown sugar over low heat, stirring until fully dissolved, then let cool slightly.
4
Whisk the brown sugar syrup, 35g coconut milk, and 6g vegetable oil into the rice flour until you have a smooth, lump-free batter the consistency of thick cream.
5
Pour the batter into the prepared tin and tap gently on the counter to release air bubbles.
6
Place the tin into the steamer, cover the lid with a cloth to stop condensation dripping onto the cake, and steam on medium heat for 30-35 minutes until the surface turns glossy and translucent and a skewer comes out clean.
7
Remove the tin carefully and let the cake cool in the tin for at least 15 minutes before unmoulding - it firms up significantly as it cools.
8
Slice into wedges once fully set, scatter over the 5g toasted sesame seeds, and serve.
