Instructions

1
Prep Slice the pork shoulder thinly against the grain. Mince the garlic and grate the ginger-fresh. Thinly slice the onion and scallion.
2
Marinate Combine pork with gochujang, garlic, ginger, soy sauce, brown sugar, rice vinegar, and 1 tsp sesame oil until coated. Let rest 20 minutes.
3
Sauté Heat 1 tsp vegetable oil over high heat until shimmering. Add pork and stir-fry 4–5 minutes, turning occasionally, until edges char and no pink remains.
4
Sauté Add onion to the skillet and cook over medium-high heat for 2 minutes until softened. Add bean sprouts and salt, toss over high heat 1–2 minutes until wilted but still crunchy.
5
Fry In a small separate pan, fry the egg over medium heat 2–3 minutes until whites are set and yolk edges just firm while center stays soft.
6
Build Spoon rice into a bowl, top with pork and vegetable mixture, and scatter scallion and sesame seeds over the top.
7
Plate Set the fried egg on top and drizzle with remaining 1 tsp sesame oil before serving.
