Spiced Lamb Patty Burger
Ground lamb patty seasoned with garam masala, cumin and fresh mint, seared in a skillet and topped with a fried egg, feta and cooling yogurt-cilantro sauce inside a toasted bun. Extra egg and feta boost the protein well past a standard burger while keeping the spiced, herby flavour intact.

Instructions
1
Prep
Combine ground lamb, garam masala, cumin, mint, ginger-garlic paste, chili powder and salt in a bowl, mixing with your hands until evenly distributed, then shape into one 3/4 inch thick patty.
2
Sear
Heat olive oil in a skillet over medium-high heat and sear the lamb patty 3 to 4 minutes per side until a dark crust forms and the centre reaches 160°F.
3
Rest
Transfer the patty to a plate and rest it for 5 minutes.
4
Fry
In the same skillet over medium heat, fry the egg 2 to 3 minutes until the white is set and yolk edges firm while centre stays soft.
5
Whisk
In a small bowl, whisk yogurt with cilantro until smooth and pale green streaked.
6
Build
Toast the bun cut sides in the skillet over medium heat for 1 minute until golden, then spread yogurt sauce on the base and layer with lettuce, tomato, onion and lamb patty.
7
Plate
Crumble feta over the patty, set the fried egg on top, close with the bun lid and serve immediately.
