Instructions
1
Prep
Finely chop the onion, mince the garlic, dice the tomato, and chop the parsley. Gather all spices.
2
Sauté
Heat the olive oil over medium heat, cook the onion for 3 minutes until translucent, then bloom the garlic, cumin, cinnamon, allspice, and smoked paprika for 30 seconds until fragrant.
3
Brown
Add the ground beef to the skillet, breaking it up, and cook over medium-high heat for 6 minutes until no pink remains and edges crisp.
4
Finish
Stir in the tomato paste, diced tomato, and pine nuts. Season with salt and pepper, cook for 2 minutes until tomato softens and pine nuts turn golden. Whisk together yogurt, tahini, and lemon juice until smooth. Warm the pita in a dry skillet 30 seconds per side. Spread sauce over pita, top with beef mixture, scatter parsley, fold in half, and serve.
5
Plate
Fold the flatbread in half and serve immediately while the beef is still hot.
