Spanish Fried Dough Rings
A protein-boosted take on the classic Spanish fried dough ring, built with a coconut-flour-and-whey base instead of a heavy enriched dough, fried briefly in hot oil and finished with a dusting of cocoa powder for fibre and a bittersweet edge.

Instructions
1
Whisk the all-purpose flour, coconut flour, whey protein isolate, baking powder, cinnamon and salt together in a bowl.
2
In a separate bowl beat the egg with the greek yogurt and sugar until smooth, then fold into the dry ingredients to form a thick, pipeable dough; rest 10 minutes so the coconut flour hydrates.
3
Heat the vegetable oil in a deep fry pan to 180C, using a thermometer to hold the temperature steady.
4
Pipe or spoon the dough into 2 ring shapes directly into the hot oil, frying each for about 2 minutes per side until deep golden and cooked through.
5
Lift onto a wire rack lined with paper to drain for a minute.
6
Dust the warm rings with the cocoa powder just before serving.
