Instructions

1
Prep Slice beef against the grain, slice bell pepper and onion, mince garlic, drain beans, and season beef with cumin, chili powder, smoked paprika, salt, and pepper.
2
Sauté Heat olive oil in a skillet over medium-high heat; sauté bell pepper and onion for 3-4 minutes until softened and lightly charred at the edges.
3
Sear Push vegetables aside, add seasoned beef to the skillet, and sear over high heat for 2-3 minutes per side until browned outside and just pink in the center.
4
Simmer Add black beans and garlic to the skillet, and simmer over medium heat for 2 minutes until beans warm through and garlic becomes fragrant.
5
Fry In a separate nonstick pan, fry the egg over medium heat for 2-3 minutes until the white is fully set and yolk edges are firm but center remains soft.
6
Build Warm the flour tortilla in a dry skillet over medium heat for 20-30 seconds per side until pliable and lightly speckled, then scatter Monterey Jack cheese down the center.
7
Assemble Pile the beef and bean mixture onto the cheese, top with the fried egg, finish with cilantro and a squeeze of lime juice, then fold in sides and roll tightly.
8
Rest Let the wrap sit for 1-2 minutes so the cheese fully melts and filling settles.
9
Plate Slice the wrap in half on a diagonal and serve immediately.
