A lightened take on Sicily's classic cheese pie, swapping heavy sweetened ricotta for a cottage-cheese-forward filling in a thin shortcrust shell, lifted with orange zest, dark chocolate and a scatter of fresh raspberries.

Instructions
1
Pulse the flour, cold butter and 4g of the sugar together until the mixture looks like coarse crumbs, then bind with a teaspoon of cold water into a firm dough; wrap and chill for 20 minutes.
2
Roll the dough thinly and line the two 8cm individual tart tins, trimming the edges; prick the bases and chill again for 10 minutes while the oven heats to 190°C.
3
Blind-bake the shells for 10 minutes until pale gold, then set aside to cool slightly.
4
Press the drained cottage cheese through a sieve into a bowl until completely smooth, then beat in the ricotta, remaining 4g sugar, beaten egg, orange zest and vanilla extract until glossy.
5
Fold the chopped dark chocolate and cinnamon through the cheese filling.
6
Divide the filling between the two part-baked shells and smooth the tops.
7
Bake for 22-25 minutes until the filling is just set with a slight wobble in the centre, then cool completely on a wire rack.
8
Chill the pies for at least 1 hour, then top each with fresh raspberries just before serving.
