Revani Coconut Semolina Cake

Revani Coconut Semolina Cake

A classic Turkish revani, this coconut semolina cake is baked to a light golden crumb, then drenched in a lemon-scented sugar syrup while still warm so every forkful stays moist and faintly tangy. Desiccated coconut folded through the batter and toasted on top gives it a nutty, fragrant finish typical of coastal Turkish bakeries.

Instructions

1
Preheat the oven to 180°C (350°F) and butter a 10cm/4-inch cake tin, lining the base with a circle of parchment.
2
In a bowl, whisk the melted butter and 30g sugar until combined, then whisk in the egg until light and slightly foamy.
3
Stir in the yogurt and vanilla extract until smooth.
4
In a separate bowl, sieve together the flour and baking powder, then mix in the semolina and 18g desiccated coconut.
5
Fold the dry ingredients into the wet mixture until just combined into a thick batter; do not overmix.
6
Pour the batter into the prepared tin, smooth the top, and bake for 25-28 minutes until golden and a skewer comes out clean.
7
While the cake bakes, make the syrup combine 45g sugar, water and lemon juice in a small pan and simmer for 5 minutes until slightly thickened, then remove from heat and cool slightly.
8
As soon as the cake comes out of the oven, poke holes all over the surface with a skewer and slowly ladle the warm syrup over it, letting it absorb fully.
9
Let the cake rest in the tin until the syrup is completely soaked in and the cake has cooled to room temperature.
10
Scatter the toasted desiccated coconut over the top, slice into wedges and serve.
