Instructions
1
Melt butter and sugar in an oven-safe skillet until a deep amber caramel forms.
2
Arrange peeled, halved apples cut-side up tightly in the caramel.
3
Cook on the stovetop a few minutes until apples soften slightly and caramel deepens.
4
Lay puff pastry over the apples, tucking the edges down into the pan.
5
Bake at 200°C (400°F) for 25-30 minutes until pastry is golden and puffed.
6
Cool slightly, then invert onto a serving plate so apples face up.
7
Melt chocolate and fold into whipped cream with eggs to make a light mousse; chill until set.
8
Plate a slice of tarte tatin with a quenelle of chocolate mousse alongside.
9
Dot the plate with extra caramel sauce and garnish with microgreens before serving.
