Instructions
1
Bake a thin chocolate sponge/biscuit base using flour, cocoa powder, eggs, sugar, and butter; cool and cut into squares.
2
Prepare the chocolate mousse by melting dark chocolate, folding in whipped cream and softened gelatin dissolved in a little warm cream.
3
Pipe or mold the mousse into dome shapes over the sponge base and freeze until firm.
4
Make a chocolate mirror glaze by heating cream, sugar, glucose syrup, and cocoa powder, then straining until smooth and glossy.
5
Pour the glaze over the frozen mousse domes to create a smooth coating, including the glazed square base.
6
Temper cocoa butter with yellow coloring and spray or brush onto a thin chocolate tile for the decorative garnish.
7
Assemble the petit gâteau on a plate with the glazed dome, chocolate base, and cocoa butter tile decoration.
8
Allow to thaw slightly in the fridge before serving with a spoon.
