Instructions
1
Warm the whole milk gently and bloom the dried yeast and a pinch of the sugar in it for 5-8 minutes until foamy.
2
In a bowl, combine the bread flour, glutinous rice flour, remaining sugar and salt, then stir in the bloomed milk mixture and the beaten egg yolk to form a shaggy dough.
3
Knead by hand for 8-10 minutes until smooth and elastic, then work in the softened butter a little at a time until fully incorporated and the dough is glossy.
4
Cover the dough and let it rise in a warm spot for 60 minutes, or until roughly doubled in size.
5
Punch down the dough, divide into 2 equal pieces, and shape each into a smooth ball; cover and let them proof a further 25-30 minutes until puffy.
6
Heat the vegetable oil in a deep pan to 170C, checking with a thermometer.
7
Fry the dough balls for about 1.5-2 minutes per side, turning once, until deep golden brown all over.
8
Lift onto a wire rack set over paper towels to drain for a minute while still hot.
9
While still warm, roll each donut in the fine granulated sugar to coat evenly, then serve immediately.
