Mexican Capirotada (Baked Fruit Bread Pudding)
Capirotada is Mexico's layered bread pudding, traditionally served during Lent, built from toasted bolillo or white bread soaked in a spiced piloncillo syrup and layered with fruit, raisins, peanuts and crumbled cheese. This baked version keeps the classic sweet-savory contrast of melting cheese against cinnamon-soaked bread and soft baked apple and banana.
