Meat Topped Flatbread
Ground beef simmered with tomato, cumin, cinnamon and allspice is spread over a warm gluten-free flatbread and finished with pine nuts, parsley and lemon. The chickpea-and-rice-flour base replaces wheat pita, keeping the char and chew of a Levantine sfiha while staying gluten-free.

Instructions
1
Prep
Whisk chickpea-gram-flour, rice-flour, baking-powder and salt in a bowl, then stir in warm water and olive-oil until thick, pourable batter forms.
2
Rest
Cover the bowl and let the batter sit at room temperature for 15 minutes.
3
Bake
Pour batter onto lightly oiled 8-inch nonstick pan, spread thin, cook over medium heat 5 minutes until surface is dry and bubbled, flip and cook second side 2 minutes until lightly spotted brown.
4
Brown
Heat olive-oil in a skillet over medium heat, sauté onion 3 minutes until soft, add ground beef and cook 5 minutes, breaking into small crumbles, until no pink remains and edges turn golden.
5
Simmer
Stir in tomato, tomato-paste, cumin, cinnamon, allspice, salt and pepper, then simmer over medium-low heat 6 minutes until mixture thickens into jammy paste that holds its shape.
6
Toast
Scatter pine nuts into a dry small pan and toast over medium-low heat 2 minutes, shaking often, until golden and fragrant.
7
Build
Spread beef mixture over flatbread leaving small border, scatter toasted pine nuts on top, then drizzle lemon juice and scatter parsley across surface.
8
Plate
Cut flatbread into wedges and transfer to a plate to serve warm.
