Mango Frozen Dessert
A lightened Indian-style mango frozen dessert built on Greek yogurt and a fold of whipped cream rather than a heavy custard base, sweetened mainly by the mango itself and a touch of condensed milk, scented with cardamom and saffron.

Instructions
1
Puree the mango in a blender until completely smooth, about 160g worth of flesh.
2
In a bowl, whisk the Greek yogurt with the condensed milk and the saffron-infused milk until fully combined.
3
Fold the mango puree into the yogurt mixture along with the ground cardamom.
4
In a separate chilled bowl, whip the heavy cream with a hand mixer to soft peaks, about 2 minutes.
5
Gently fold the whipped cream through the mango-yogurt mixture in three additions, keeping as much air in as possible.
6
Pour the mixture into a small airtight tub, cover, and freeze for at least 6 hours or until firm.
7
Scoop into two bowls, about 2 scoops each, and scatter the chopped pistachios over the top just before serving.
