Luqaimat with Rose Syrup

Luqaimat are the small, golden, deep-fried dough balls eaten across the Gulf during Ramadan and at celebrations, made from a loose yeasted batter rather than a kneaded dough so the inside stays airy and custardy against a crisp shell. As soon as they come out of the oil they're dunked warm into a lemon-sharpened sugar syrup perfumed with rose water, then finished with a scatter of toasted sesame seeds for crunch and nuttiness against the floral sweetness.

Instructions

1
Whisk the flour, cornstarch, dried yeast, sugar, ground cardamom and salt together in a bowl.
2
Pour in the warm water and beat until you have a smooth, thick, sticky batter with no lumps - it should fall heavily off a spoon.
3
Cover the bowl and let the batter rest somewhere warm for 45 minutes, until visibly puffed and bubbly.
4
Meanwhile make the syrup simmer the sugar, water and lemon juice in a small pan for 4-5 minutes until lightly syrupy, then stir in rose water off the heat and set aside to cool slightly.
5
Heat the vegetable oil in a small deep pan to 170C/340F, checking with a thermometer.
6
Wet your hand or use two teaspoons to drop small walnut-sized blobs of batter into the hot oil, frying in batches of 4-5 so the pan is never crowded.
7
Fry for 3-4 minutes, turning often, until deep golden brown and cooked through at the centre.
8
Lift out with a slotted spoon onto kitchen paper to drain briefly.
9
While still warm, drop the fried dough balls straight into the rose syrup and turn to coat generously.
10
Pile onto a small plate, scatter with toasted sesame seeds and serve immediately while warm and glossy.
