Bistro Burger with Fried Egg
A single French bistro-style burger built from lean sirloin, griddled and topped with a lightly cooked egg white, sautéed onion, Emmental, and Dijon mustard on a toasted bun. Served with arugula salad and tomato, the patty stays juicy without relying on fatty cuts or yolk-heavy richness.

Instructions
1
Prep
Thinly slice the onion and tomato. Halve the bun lengthwise and toast the cut sides in a dry skillet over medium heat until golden, about two minutes total. Discard the egg yolk.
2
Heat
Form the lean ground sirloin into a 200g patty, season generously with salt and pepper. Sear in the same skillet over medium-high heat for three minutes per side until a brown crust forms and the center reaches 160°F.
3
Heat
In the skillet, warm one teaspoon olive oil over medium heat and sauté the sliced onion until deeply caramelized and tender, about five minutes, stirring occasionally.
4
Plate
Spread Dijon mustard on the bottom bun, add the patty and caramelized onion, place the Emmental slice on top and crack the egg white onto the cheese. Lay the top bun on, arrange the arugula and tomato slices alongside, and serve immediately.
