Light Vanilla Flan

A lightened take on the classic French baked custard, built on skim milk and whole egg with just a touch of sugar backed by monk fruit extract, still carrying the glossy burnt-sugar caramel and silky set of the original.

Instructions

1
Heat oven to 160°C (325°F) and set a deep baking tray on the middle rack with a kettle of water on standby for the bain-marie.
2
Melt the sugar with the water in a small pan over medium heat without stirring, swirling occasionally until it turns deep amber, then immediately divide between the 2 ramekins, tilting to coat the base.
3
Warm the skim milk gently in a saucepan until just steaming, not boiling, then remove from the heat.
4
Whisk the egg, egg white, monk fruit extract, vanilla extract and salt together in a bowl until just combined, taking care not to whip in air.
5
Pour the warm milk slowly into the egg mixture while whisking constantly, then strain the custard through a sieve into a jug to remove any chalazae or froth.
6
Divide the strained custard evenly between the 2 caramel-lined ramekins.
7
Place the ramekins in the baking tray and pour boiling water into the tray until it reaches halfway up the sides of the ramekins.
8
Bake for 32-35 minutes until the custards are just set with a gentle wobble in the centre; a thermometer inserted should read close to 82-85°C.
9
Lift the ramekins out of the water bath and cool to room temperature, then cover and chill for at least 4 hours or overnight.
10
Run a thin knife around the edge of each ramekin and invert onto a small plate, letting the caramel sauce pool around the flan before serving.
