Instructions

1
Pulse flour, cold cubed butter and sugar together until the mixture resembles coarse breadcrumbs, then work in the egg yolk and ice water just until a dough forms.
2
Flatten the dough into a disc, wrap and chill for 30 minutes before rolling.
3
Roll the dough thin and line two 8cm individual tart tins, pressing into the corners and trimming the edges; chill for 15 minutes.
4
Line the chilled tart shells with parchment and baking beads and blind bake at 190°C for 12 minutes, then remove the beads and bake a further 5 minutes until pale gold.
5
Whisk the whole egg, extra yolk and sugar together until just combined, then whisk in the lemon juice, lemon zest, cream and melted butter until smooth.
6
Strain the custard through a fine sieve directly into the warm tart shells to remove any egg strands.
7
Lower the oven to 150°C and bake the tarts for 14-16 minutes until the custard is just set with a slight wobble in the centre.
8
Cool the tarts to room temperature on a wire rack, then chill for at least 1 hour before serving.
