Keto Cottage Cheesecake
A low-carb reworking of a baked New York-style cheesecake that swaps the usual biscuit crust and sugar for almond flour and allulose, while cottage cheese lightens the filling without losing its dense, tangy richness.

Instructions
1
Preheat oven to 160C/320F. Line the base of a 10cm springform tin with parchment.
2
Mix the almond flour and melted butter together and press firmly into the base of the tin; chill while you make the filling.
3
Blend the drained cottage cheese until completely smooth and lump-free, about 1-2 minutes.
4
Beat the cream cheese in a bowl until soft, then add the blended cottage cheese, allulose, lemon juice, vanilla and salt, mixing until smooth.
5
Add the beaten egg and mix on low speed just until combined - do not overbeat or the cheesecake will puff and crack.
6
Pour the filling over the chilled base and smooth the top.
7
Bake for 32-36 minutes until the edges are set but the centre still has a gentle wobble.
8
Turn off the oven, prop the door ajar, and let the cheesecake cool inside for 30 minutes to prevent cracking.
9
Chill in the tin for at least 4 hours, ideally overnight, before releasing from the springform.
10
Top with the crushed raspberries just before slicing and serving.
